My vote still goes to beans and rice. I usually use black beans and add onions, tomatoes (canned are really easy) salsa, and cheese (cheddar or swiss). You can put it in tortillas if you want, serve it as a main dish or as a side. And it takes about 5 mins to make (assuming you started your rice-maker when you got home from work before going for your run )

I remember my parents making tuna caserole a lot as a kid. I hated it. I think it had something to do with the cream of mushroom soup and the canned tuna and maybe the nasty crunchy top. But it would probably work as a stand-by. (Nope, I wasnt any less picky as a child than I am as an adult!)
