So I have a bottle of balsalmic vinegar that I don't have a cap on, but rather, one of those drink pourer things. Makes it easy to pour. Today, I went to use it (probably haven't used in a couple weeks, if at all perhaps, since I got the bottle filled at the Italian grocer I go to -- they have a big jug of it & you just fill bottles) and there was a plug of stuff at the top. I fished the stuff out with a knife - it held together in a gloppy, gummy form.
I tasted what was behind and it seemed fine. Was that the "mother" that can develop? Is my vinegar safe to use?
*I asked Cheffy because she is a chef and Trent, because he seems to know everything.

Your vinegar is safe.
The plug was likely the residue in suspension that gives it its flavor, dried out.
The vinegar's acidity protects it from spoilage. |

Balsamic Vinegar is made the same way that Wine is made, by aging in barrells, so yes, it will develop residue or *sludge* and is perfectly harmless, just not pretty..

Thanks both. I'd just never seen it before and figured it must have oxidized because of the pourer thing. I used it and am still here. My salad was deelish. |

Balsamic vinegar is made through a process that includes both fermentation and oxidation. It is already oxidized.  |
