Blueberry muffins (Read 254 times)

I modified my existing recipe to make these. They turned out so good, I had to share.
I didn't make them too sweet, but couple of extra tablespoons of turbinado sugar should fix that.

1 1/4 cup whole wheat pastry flour
2 teaspn baking powder
1/2 teaspn baking soda
1/4 teaspn salt

1/3 cup honey
1 tablespn turbinado sugar plus extra for sprinkling
2 eggs
4 tablespn silken tofu
1/3 cup yogurt
1 teaspn vanilla extract
1 teaspn grated lemon rind
1 cup fresh or frozen blueberries

Blend wet ingredients and sugar until smooth. Add sifted dry ingredients, blend until just combined. Fold in blueberries.
Pour in greased miffin pan. Sprinkle with extra sugar. Bake at 400 F for 20-25 min.
This made about 11 muffins.
