    What is the best way to open chestnuts without burning my fingers or trashing the mean while trying to get the dang skin off?
      saw this: http://www.chestnutsonline.com/peel.htm Maybe a special tool for the job? I don't ever work with them, I have to say.... Smile

        Are you scoring them prior to roasting, boiling or whatever method you use? This does make it easier, not to mention they won't burst. As for not burning your fingers...might I recommend cooling a little longer?? Wink Big grin Sorry, an extra day at home with the monster kids has put me in mommy-sarcasm mode!! In all seriousness, are you cooking them to eat plain or to use in a recipe? If a recipe, cooling completely is fine, thus removing the burning fingers danger. If you just want to eat them warm, try scoring a little deeper so they peel easier.

          I score them. If you let them cool, the skin sticks more and the shell gets hard to peel.
