i made some spicy sweet pickles last week and took them to a picnic today and ended up having some on a sandwich with cheddar and whammo...that taste combo of sharp cheddar and sweet pickles is straight from childhood. It's been probably 25 years since I have had a good sweet pickle, I dont like the store bought ones.

I wonder if zucchini would pickle? My mom used to make killer pickled carrots.

I have made pickles from yellow squash, but not zucchini. The only real difference I see is that they don't keep as long..... gets mushy if left in jars for too long......

Squash Pickles are a common thing here to make in the South.

My stepmom used to make dill pickles and mustard beans. I don't like mustard, but those were good. Oooh, and pickled beets! I LOOOOOOOOVE pickled beets!
