Had a great dinner last night/breakfast this AM-very easy and it was super tasty-thought I would share.
Heat oil in pan, pre-heat oven 375
1/2 eggplant long ways and score with criss-cross pattern-cook cut side down until golden brown
Place cut side up in baking dish
Poor canned organic diced roma tomatoes over eggplant (I only used 1 eggplant and about 1/2 can of tomatoes-but whatever)
crumble on goat cheese-however much looks tasty
sprinkle with fresh basil, salt and pepper to taste
bake approx 40 minutes
