Probably a dumb question, but is it too late to log my miles from 5/21? I ran the miles but forgot to log them since I went on vacation.

It is too late. There's no way to do catch-up posting in the Miles Game.

Last week's mileage totals would either be from 5/19-5/25 or 5/20-5/26, depending on whether you track Sun-Sat or Mon-Sun. You do not need to log miles every day, just once a week. Last week would include 5/21, and you can log the weekly total anytime before tomorrow. (Hopefully I understood your question correctly.)
If you are referring to 5/21 as the date of last week's nag list and you failed to post for the week before, then Bob is correct. There is no way to post those miles.
