    At first look, the word quinoa looks like the answer for a question in a game of Trivial Pursuit. The Captial Press has created an e-book, “Keen on Quinoa” that takes a look at the new demand behind this grain-like crop. The Kindle e-book “Keen on Quinoa” is available through Amazon for free today (Jan. 28, 2013). It will revert to its normal price of $0.99 at midnight.

     

    As in, “What is a nutritious seed that has been grown in South America for thousands of years that few people can pronounce?”

    Quinoa — pronounced KEEN-wah — is a staple in countries like Bolivia, Peru, Ecuador and Chile and demand for it is growing among U.S. consumers looking for a gluten-free substitute for wheat. Now, U.S. farmers and researchers are exploring the potential for the crop, including organic and conventional varieties bred for North American climates. While there are challenges, some say this tiny crop has big potential.
