    Eclair cake recipe

     

    1 cup water

    1 stick of butter

    1 cup of flour

    4 eggs

    Heat water and butter to a boil then add flour, beat in 4 eggs one at a time with an electric mixer, spread onto greased 13x9 or bigger baking pan and bake at 375 for 30 minutes.

    Filling

    3 cups milk

    2 large packages or 3 small packages of vanilla pudding

    8oz cream cheese

    8oz cool whip

     

    Mix milk, vanilla pudding and cream cheese for 2 minutes with electric mixer, spread over eclair cake.

    Top with cool whip

    Drizzle Hershey's chocolate syrup over top

    Refrigerate 2 hours and serve.

      APPLE DUMPLING RECIPE(Holy handgrenades)

       

      6 apples(peeled and cored) Mcintosh or cortland are best

      Rolled premade pie crust(2 to a package)

      Cane sugar

      cinnamon

      nutmeg

      spray on butter

      1/2 cup brown sugar, packed

      1 1/3 cups hot water

      1/3 cup butter

      Dash of cinnamon and nutmeg

       

      Allow pie crusts to warm to room temperature. On a lightly floured cutting board roll out the pie crusts. Place an apple on the pie crust in a position so that you can cut the dough and cover the entire apple(each crust should do 3 medium apples or 4 small apples). Pour sugar into the apple core and fill. Spray butter on outside of apple and cover with cinnamon. Roll the dough over the apple and seal. Place in a greased pan. If you misjudged when cutting the dough and it doesn't cover the apple completly just take some extra  and patch it on..they don't have to look good just taste good.

       

      Combine brown sugar, butter, hot water, nutmeg and cinnamon; pour over dumplings. The mixture should cover the apples half way in the pan. Bake at 350 degrees for 30-35 minutes until crust turns lightly brown no need to baste. Adjust the recipe for more apples and syrup.

                    Just here for the weight loss programme and trying to be seasonally appropriate:

                     

                    Makers Mark Egg Nog

                     

                    1 Liter Maker’s Mark
                    1 Quart milk
                    1 Quart heavy cream
                    2 Dozen eggs
                    1 1/2 Cups sugar
                    Nutmeg for garnish

                     

                    Separate eggs and beat the yolks until creamy.
                    Whip sugar into the yolks, then bat the whites until they stand in peaks, adding a 1/2 cup of additional sugar if desired.
                    Beat the yolks and Maker’s Mark together and add the whites.
                    Beat cream into a froth, then add milk and cream to the egg mixture.
                    Add nutmeg to taste and garnish each cup with a dash of nutmeg for a dash of color. This recipe makes 2 1/2 gallons.
