      All cooked to death and beyond recognition.  All cooked and drained of their nutrients.  I guess you don't boil the collards with some ham hock, do you? 

       

      Nope.  I cook my greens differently.

       

      Lightly steam.  Chop.  Sautee with butter or olive oil.

             the first dinner i ever cooked for my now husband included kale, cut in a fine chiffonade, quickly sauteed in olive oil with red pepper flakes (and brown rice cooked with coconut milk and black eyed peas).  he appreciated the variation on hoppin' john, but has never gotten over being served 'practically raw' kale.  We've just had to agree to disagree on how to cook greens.  (He doesn't need them greasy and salty, just boiled for a long time).
