Thick Root Soup (Read 383 times)

    Made this last night and it was really tasty!!


    thick root soup (with a nice bite to it!)

    • 1 celery root, peeled and chopped
    • ~6 parsnips, chopped
    • 1 russet potato, chopped
    • 2 carrots, chopped
    • ~3 cups of chicken broth
    • ~3 cloves garlic
    • To taste: cinnamon, nutmeg, red pepper flakes, salt and pepper, maple syrup


    1. Brown veggies and garlic in large pot on high.
    2. Pour on broth.
    3. Add seasonings.
    4. Reduce to low and simmer for a while until veggies are tender to the bite.
    5. Mash with potato masher.
    6. Finish with maple syrup

      That looks amazing.  Thanks for sharing...I have all those but celery root in my fridge.  Maybe I will make this tomorrow.
