Would a training group through a running store count? I've never heard of this Gym fee reimbursement...
What sort of documentation do these reimbursements require?

Could you submit your Garmin records as proof of your exercise? Receipts for shoes and other gear?

I get it through my health care provider. They ask for a brochure of the gym, proof of payment, and a log showing when I was there. Really, not a lot of documentation required.
I don't think the issue is providing documentation that you workout and spend money on it. You specifically have to spend the money on a gym membership.
