how long do you let a cab "breathe"? anything else I can do besides drink lots of wine to make it taste better?

Decanting a red wine can make it taste better. Here is my theory...... picked up bits and pieces from all sorts of locations. 1) An hour in the decanter is like a year in the cellar. I would never decant for more than 5 or 6 hours. Decanting $12 bottle for a couple of hours can make it taste like a $35 bottle. 2) Only do step 1 with young wines. No need to decant mature wines, they can oxidize quickly. 3) You can have a somewhat aggressive pour into the decanter if the wine is young but be very careful with mature wines. 4) Older, mature wines are primarily decanted to remove sediment. If you are drinking good wines that have been cellared for a while be careful when decanting. Consider a buying a funnel-filter. 5) No need to decant white. Best way to make wine taste better...... experiment and find a wine (or wine maker) you like. Don't let any wine snob tell you that the wine you are drinking is no good...... if you like it that makes it a good wine, regardless of what Chet Winston III says.
And remember red wine is suppose to be served at "room temperature" But that was back in the days before modern heating. Room temperature should actually be about 60 - 65 degrees. I keep my red wine in my basement so it's cooler when I drink it and sometimes will even throw it in the freezer to cool it down just a bit. I've even (gasp) been known to pour my red wine over ice if the restaurant has it too warm. Some of my snooty friends think that's so taboo, but I'm the one drinking it and wine is meant to enjoy, the way you like it. Not how they feel you should like it.

Good point. My rule of thumb is a) put your red wine in the fridge 20 minutes before you plan to serve it. (if its not in a cellar/basement) b) take your white wine out of the fridge 20 minutes before you are going to serve it. I'm actually going to a couple of wineries tomorrow in Niagara, Ontario... .mmmmmm wine.

How old is the cab? If it ain't old, it don't need to breathe. And I am saddened that I won't get to go enjoy the eisweins.

How old is a "mature" wine?

Depends on the grape, the location it comes from, the year it was made, the methods used to make the grapes into wine and how the bottle of wine was stored...there is no single answer. This too - http://www.nytimes.com/2008/05/07/dining/07pour.html?th&emc=th

1 - glad the link didn't go to YouTube for a RR. I LoL about that on the main Forum and recal you were right in the thick of it. 2 - I guess my parents were right when they told me it was all in my head. Good article. Thanks for the link. My take away is that it is good to let your reds breathe a bit prior to service. Something new for me to try this weekend.

Blue Moon..... I think that is what Tricia ask for at the Irish Pub we went to after the Richmond marathon. And yes... it has been a hard long week... I just hope I can get up for my run tomorrow.
