Sun - Long run, 5-7 miles. You don't have to stress over these runs, just get in the mileage. If you can only get in 5, that's ok, get it in. However, if you are feeling good and can go a little longer, get in the full distance.

Sun - Day off, long run pushed back to Mon. Do you feel that the fact you are on your feet all day adds some pressure or affects the bursa problem in the knee? I know you said you are on your feel all day. Are you wearing comfortable shoes at work? I am sure you have thought of all of this before.

Mon - Adjusted long run of 5-7 miles. See how the knee reacts to a run of this length (it acted up on a short run, so I guess it could act up any time). Does the day off, day on seem to work in terms of recovery and healing? It's only been two weeks and you have only put in five runs, so it may just hurt because you have started back at it.
