         I see quite a few Bells here and I can honestly say I haven't had a single beer they make I don't think is better than the average microbrew.  Generally, most amber ales are too mild for my taste, but the Bells amber has this Belgian yeasty quality that I will drink and my wife doesn't think is too strong.  Anyone who knows what the recipe is, let me know!

          Grain: Mostly 2-row barley malt, a small percentage of Munich, and just enough caramel malt to get 16 SRM color. 14.5 Plato. Mash at a temp to allow moderate fermentability. ABV should be just under 6%.
          Hops: Equal amounts of Fuggle and Cascade for bittering and aroma. Aim for 30 IBUs
          Yeast: Culture from bottles, or use WLP001.

          Not at it at all.

                     No creativity required. It's science. Somewhat slipshod science at that. Pour out the bottle, leaving 1/2 oz of beer, or so. Add back in 2 oz. of water with 1/4 teaspoon lemon juice and 2 teaspoons sugar. Cap with an "s" lock. Do this with 4 bottles, and see if one grows. Whalah, live yeast.

                      Interesting. I've heard of a number of techniques, but lemon juice is a new one.  What does the lemon juice do?

                          Yeah 2 tsp sugar seems like a lot for a couple ounces of water.

                          I have had Bell's Amber.   It's been a while but I don't remember yeast being prominent in the flavor profile.  I would go with the White Labs yeast mentioned.  Or Wyeast 1056.  Or if you want dry Safale US-05.  I believe that they are all the same strain.  American Ale yeast.  Neutral.

                           

                          I may try harvesting yeast some day just for the hell of it.  If I were to I think that I would try for a proprietary strain ... maybe a Belgian.

                                2nd beer and last call.  Stone Ruination IPA.  It's amazing that after drinking a 120 Minute anything tastes like a lite beer, even a 7.7% double IPA clocking in at over 100 IBU's.
