Have you had them roasted? That's the way to eat them. We will cut up sweet potatoes, carrots, parsnips, Brussels sprouts, & beets (or any combination), spread them on a pan, drizzle with olive oil & roast in the oven. Awesome.

Quoted for emphasis. I don't like beets. Since they're all the rage I tried to eat some every day for like 5-6 days, and completely quit. Just not good. Plus it didn't change anything in my running that week.
