Food is an interesting comment as I have never done a 24 hour race where I planned on relying on any food from the race. I have taking small bit of coke or bits of stuff ... But I always wanted to be in complete control of what I had available.

I think with new race management taking over this year, if you went in to it expecting the same range of food throughout the day as you had gotten previously, that it could throw you off.

This is basically what happened. Also the list of foods was very similar to previous years, but at any given time there was less choice. I tend to rely on my taste and cravings to tell me what to eat and sometimes nothing available at the time appealed to me. Previous years there had always been enough choices that I could find something. As a result I think I overloaded on more sugary foods and missed complex carbs and protein.

For a timed race, I bring my own everything, including water.
For a schlepping race, I bring my own everything, except water (which may actually be chancing it, but ya gotta draw the line somewhere).
Aid stations are for fun impulse snacks and, perhaps, actual human assistance with unanticipated needs.

A few times relying on what the aid stations have has worked for me, a few times it hasn't. My previous 3 years at NC24 the aid stations have had anything I wanted so I made the assumption it would be true again even with the change in RD. I still haven't figured out exactly what I need because it seems to change from race to race.

That's what training is for - to learn what your body wants and/or make your body adapt to what it's going to get. (I've found the latter to be easier than the former )

For a schlepping race, I bring no nutrition, relying on Coke at aid stations.
Yes, and both of these. Funny, when I was shopping before Dawn to Dusk to Dawn, with Maggie Guterl (member of 2015 24-hour US team), who was going to crew me, she was like "Wait, you're going to fuel COMPLETELY WITH COKE AND DR. PEPPER? I would not recommend that.". So it's even embarrassing among runners.

Serious question from a newb - I get you guys bringing your own food, but why bring your own water?
I know you have your reasons - just curious as to what they might be.

TL;DR - confidence and convenience
I bring my own water (1 gallon jugs) and a bunch of my favorite Camelbak bottles - pre-filling them all. Then, when I eventually need to refill a bottle, it's a lot quicker to be able to be able to pour it out of a jug than to wait while it trickles from spigot of the race-supplied water cooler.
That said, I can usually find a nearby member of someone else's crew to do the refilling - it only takes a minute to refill 6 bottles from a jug.
Races sometimes run out of water, let the cooler run dry just when you need it, or pack up early leaving no water at the end of the race.
Even when a race offers to keep your bottle filled for you, it might be preferable to handle yourself. My first time at D3, they did this but the access required running to the outside lane - too inconvenient. The next time, they'd moved the station to the infield, accessible from the inside lane - this I took advantage of (but still had brought my own water).
Some runners bring their own bottled water. I think the mini-bottles could work well to grab, go, then toss. (If I did this, I'd pre-open them because hands don't always work well once you're into a race or if it's cool.)

That's why...
OK, I don't always bring my own water. But I have my crew prepare it for me, with the Coke (fmor 2L bottles), in 5oz flasks. Then I can always grab a known quantity from my crew. Next lap I will toss the flask, to be refilled. My first 24-hour I didn't have a crew, but brought a cooler filled with water bottles, and several cans of Coke and DP. Again, it was just the complete control of access. My table, my stuff, I know what it is, and can get to it easily without possibly dodging around other runners.
