It's so simple; breaded and fried eggplant or ravioli or roasted spaghetti squash or pasta or chicken or whatever, a decent sauce (I use tomato basil), cheese (I use provolone) then slide it in the oven and turn the broiler on high and wait 3 to 5 minutes then bam.

ROS, dinner tonight was pot roast and mashed potatoes.
I got 3.1 miles on my own before the group and 3.7 with the group. All miles were a little faster than I intended but felt great.
